In the reading passage it discusses that bread was the first grain-based food. But the lecturer casts her doubt by arguing that the first grain-based was beer. There are several reasons she mentioned during the lecture.
First of all, she argues that wheat doesn't need to be grounded for food because wheat itself can be a good source of food when it is sprouted. She gives the fact that while grounding the wheat need a lot of effort, letting the the wheat sprout doesn't require any effort from the person. Conversely, the reading suggests that because people had to eat the wheat raw, they ground it because it was difficult for them to chew it. In order to soften it, they ground the wheat into powdery wheat like today.
Secondly, she mentions the process of fermentation. Wheat begins fermentation very quickly and it is noticeable because of the foaming and bubbling. It dind't take much time for people taste it which could have led to the discovery of beer. On other hand, the reading discusses that the paste had a better quality when it went to fermentation.
Lastly, the lecturer discusses that early people couldn't have associated cooking with fire. Unlike us, prehistoric people would let the paste ferment. This refutes what reading the suggests that people baked the paste by using fire.
